How We Got Started

"He Who Has Health Has Hope; And He Who Has Hope Has Everything"

It all started... with a phone call 📲

Elizabeth had dealt with a lifetime of severe inflammation, stomach pain, allergies and brain fog. To make matters worse, she had to undergo two invasive shoulder surgeries from injuries sustained in two rear end car collisions. Needless to say, her health was in bad shape. One day, her son (Alejandro), after hearing complaints regarding stomach pain and heartburn mentioned, "Hey, Mom! You should drink 1 tablespoon of apple cider vinegar everyday." Elizabeth shrugged, but then followed through with this simple routine. Her heartburn slowly dissipated.

From that point forward, the two of us have vastly changed our lifestyles, the primary change being centered on a whole food plant-based diet. Alejandro switched from grilling steaks to grilling mushrooms and potatoes while Elizabeth went from slamming gouda cheese and ice cream to not having them at all. We dove deep into the literature and learned new recipes as we slowly moved towards a whole food plant-based diet. For Alejandro, it was first not eating meat at home (while enjoying the occasional NYC beef shawarma), to then eliminating all meat, to then getting rid of eggs and dairy. For Elizabeth, cutting animal meat and eggs was easy, as she was always grossed out by the concept due to some traumatic childhood experiences. But the hardest part was the cheese. She loved it, so much so that she always had at least 5 variations in her fridge at any time.

We didn't only eliminate the animal products from our plate, however. We focused in on adding enough enough variety of all the main plant groups (whole grains, vegetables, fruits and legumes) and read up on all the related scientific literature. From Dr. Michael Greger's How Not To Die and Dr. Neal Barnard's Your Body In Balance to videos from Dr. Michael Klaper on Youtube, we got a firm grasp of the immense power of a plant-based diet for not only improving health and wellbeing generally, but also for treating and sometimes reversing chronic illnesses. And at the same time, a few months into our (somewhat slow) transition, the effects started to really kick in. The stomach pain and heartburn were gone for good, the allergies were way down, while the occasional lethargy, constipation, brain fog and added body fat melted away.

We started sharing our results with relatives and close friends (often times, and still to this day, with great annoyance in a "here we go again" kind of way!) And from there, we began helping others facing the same problems we were facing. Heartburn? Whole food plant-based diet. Arthritis? Whole food plant-based diet. Inflammation? Same thing. But the best story is from our dear friend. She was 3 months pregnant and her doctor warned her that she would likely need to be in bed rest and may lose her child due to pre-diabetes and high blood sugar levels. She called us and quickly adopted our guidance and upon her next check-up visit four weeks later, her doctor was left stunned. Her blood sugar had returned to the normal range and 5 months later she birthed a beautiful baby boy.

We've learned a lot over the years from all phases of this transformation: How to get started, how to find healthier methods of cooking, what the traps are that present themselves along the way and the scientific mechanisms between foods and health outcomes to creating the structures to maintain the best possible health for life. For us, there is no greater feeling than hearing from friends and those we care about on how their wellbeing is dramatically improving. And when we have our health, both in body and spirit, only then can we become our best selves in serving humanity.
